This salad is one of the simplest and easiest things I can throw together in my kitchen. Its full of vibrant flavors and colors and is absolutely full of good energy!
-One Head of Organic Romaine Lettuce, chopped
-One Avocado, cubed
-One Quarter Red Onion, sliced
-One Cup of Organic Baby Tomatoes, halved
-One Quarter cup Braggs Apple Cider Vinegar
-One Quarter Cup Organic Extra Virgin Olive Oil
-Salt and Pepper
-Optional: Any olives or goats feta
Chop the washed head of romaine lettuce and put it in a large glass or ceramic bowl.
Chop the onion and add to the bowl.
Half the tomatoes and add them too!
Cut the avocado in half, pit, and put that in the bowl.
I like to add my salt and pepper to the veggies in the bowl before I mix my dressing.
Mix the ACV and EVOO in a mason jar and shake wildly! Yes, I mean wildly, and add to salad mix slowly. Start with half the dressing and stir the salad. Add salt and pepper to taste.
I like to wait about five minutes before I decide to add more or not. Less is more!
If you're going to add the feta or the olives, I do that just before I serve it and stir before plating.
